Ingredients:
300g frozen cod (thawed)
20g red leaf lettuce
50g cooking oil
5g salt
5g chicken essence (or chicken bouillon)
30g butter
1 green onion (chopped)
10g garlic (chopped)
Additional cooking oil as needed
Instructions
Prepare Ingredients:
Thaw the frozen cod, wash it, and pat it dry with a paper towel.
Wash the red leaf lettuce, drain, and arrange it on a serving plate.
Finely chop the green onion and garlic.
Make the Garlic and Green Onion Oil:
Heat 50g of cooking oil in a pan over medium heat (until about halfway hot, not smoking).
Add the chopped garlic and fry until golden brown.
Stir in the chopped green onion, salt, and chicken essence. Mix well and set aside.
Bake the Cod:
Grease a baking tray with 30g of butter.
Place the cod fish on the tray and bake at 200°C (392°F) for 7 minutes, or until the fish is cooked through.
Assemble and Serve:
Place the baked cod on top of the lettuce.
Drizzle the garlic and green onion oil over the fish.
Serve hot.
