Baked Cod with Green Onion Oil on Lettuce



Ingredients:

  • 300g frozen cod (thawed)

  • 20g red leaf lettuce

  • 50g cooking oil

  • 5g salt

  • 5g chicken essence (or chicken bouillon)

  • 30g butter

  • 1 green onion (chopped)

  • 10g garlic (chopped)

  • Additional cooking oil as needed

Instructions

  1. Prepare Ingredients:

    • Thaw the frozen cod, wash it, and pat it dry with a paper towel.

    • Wash the red leaf lettuce, drain, and arrange it on a serving plate.

    • Finely chop the green onion and garlic.

  2. Make the Garlic and Green Onion Oil:

    • Heat 50g of cooking oil in a pan over medium heat (until about halfway hot, not smoking).

    • Add the chopped garlic and fry until golden brown.

    • Stir in the chopped green onion, salt, and chicken essence. Mix well and set aside.

  3. Bake the Cod:

    • Grease a baking tray with 30g of butter.

    • Place the cod fish on the tray and bake at 200°C (392°F) for 7 minutes, or until the fish is cooked through.

  4. Assemble and Serve:

    • Place the baked cod on top of the lettuce.

    • Drizzle the garlic and green onion oil over the fish.

    • Serve hot.
