Stir-Fried Rice Noodles with Shrimp and Scrambled Eggs

Ingredients:

  • 400g rice noodles

  • 8 medium shrimp

  • 1/2 onion

  • 80g bean sprouts

  • 1 green onion

  • 1 egg

  • 1/2 teaspoon salt

  • 1/2 teaspoon chicken powder (chicken bouillon)

For Marinade:

  • A pinch of salt

  • A dash of light soy sauce

  • A few drops of sesame oil

  • A pinch of pepper

  • 1/2 teaspoon cornstarch

For Sauce:

  • Chicken broth (as needed)

  • Cornstarch (as needed)

  • Salt, sugar, and pepper (to taste)

Instructions:

  1. Prepare Ingredients:

    • Gently loosen the rice noodles and set aside.

    • Peel and devein the shrimp, then rinse and drain well. Mix the shrimp with the marinade ingredients and set aside.

    • Slice the onion into thin strips.

    • Rinse the bean sprouts.

    • Cut the green onion into segments.

    • Beat the egg until well mixed.

  2. Cook the Rice Noodles:

    • Heat 2 tablespoons of oil in a pan.

    • Add the rice noodles to the hot oil and stir-fry gently. Toss the noodles lightly, then place them on a serving dish.

  3. Cook the Shrimp and Vegetables:

    • Heat another 2 tablespoons of oil in the pan. Stir-fry the shrimp until slightly cooked, then add the onion, bean sprouts, and green onion. Stir-fry until the vegetables are cooked through.

  4. Prepare the Sauce and Combine:

    • Pour in the sauce mixture (chicken broth, cornstarch, salt, sugar, and pepper) and bring it to a boil.

    • Slowly drizzle in the beaten egg while stirring, allowing the egg to cook and set in the sauce.

    • Pour the shrimp, vegetables, and sauce over the rice noodles.

  5. Final Tip:

    • After heating the oil, swirl the hot oil around the sides of the pan to evenly coat it before cooking the noodles.

Your stir-fried rice noodles with shrimp and scrambled eggs are ready to serve!
