1 egg

1/2 teaspoon cornstarch
For Sauce:
Chicken broth (as needed)

Prepare Ingredients:
Gently loosen the rice noodles and set aside.

Beat the egg until well mixed.
Cook the Rice Noodles:
Heat 2 tablespoons of oil in a pan.

Cook the Shrimp and Vegetables:
Heat another 2 tablespoons of oil in the pan. Stir-fry the shrimp until slightly cooked, then add the onion, bean sprouts, and green onion. Stir-fry until the vegetables are cooked through.
Prepare the Sauce and Combine:
Pour in the sauce mixture (chicken broth, cornstarch, salt, sugar, and pepper) and bring it to a boil.
Slowly drizzle in the beaten egg while stirring, allowing the egg to cook and set in the sauce.
Pour the shrimp, vegetables, and sauce over the rice noodles.

After heating the oil, swirl the hot oil around the sides of the pan to evenly coat it before cooking the noodles.
